Product description

Vital wheat gluten 82 is a high-value source of plant-based proteins. The enormous elasticity of the gluten makes it an excellent binder for end products (e.g. dough). The wheat gluten is activated by a wet process, allowing it to be separated from the starch component. The wheat gluten is then dried again and grinded. This results in a protein-rich, cream-coloured fine powder with a characteristic flavour and neutral aroma.
